Shun Premier 9 Inch Bread Knife, VG-MAX Steel, 68-Layer Damascus, Hammered Finish, Walnut PakkaWood Handle
- Description
The Shun Premier 9 in Bread Knife uses wide, low-frequency serrations to cut through crusty and soft breads without crushing the loaf and with far fewer crumbs than a plain edge or closely spaced sawtooth serrations. The 9 in blade allows long strokes with a light touch, and it also cuts cakes and pastries cleanly.
Blade: Every Premier blade has a core of VG-MAX, Shun's proprietary stainless steel. It builds on VG10 with more carbon, chromium and tungsten for strength, wear and corrosion resistance and a very fine, sharp edge. It is clad in 68 layers of stainless Damascus, 34 per side, which support the core and add stain resistance; where the steels meet near the edge they form a wavy line similar to a hamon. The serrated edge is hand-sharpened to 16 degrees per side, and the hammered tsuchime finish acts like a series of small hollows that reduce drag and help food fall away.
Handle: The contoured walnut PakkaWood handle is genuine hardwood impregnated with resin, so it resists moisture and is strong and durable. The embossed end cap with brass trim balances the knife in the hand.
