Shun Premier 8 Inch Chef's Knife, VG-MAX Steel, 68-Layer Damascus, Hammered Finish, Walnut PakkaWood Handle
- Description
The Shun Premier 8 in Chef's Knife is the knife most cooks use every day. The 8 in blade slices, dices and chops a full range of foods, the wide blade keeps your knuckles off the cutting board and carries cut food to the pan, and the curved belly rocks through fresh herbs for a fine mince. Shun makes Premier blades thinner than comparable European-style chef's knives, so the knife is lighter in the hand.
Blade: Every Premier blade has a core of VG-MAX, Shun's proprietary stainless steel. It builds on VG10 with more carbon, chromium and tungsten for strength, wear and corrosion resistance and a very fine, sharp edge. It is clad in 68 layers of stainless Damascus, 34 per side, which support the core and add stain resistance; where the steels meet near the edge they form a wavy line similar to a hamon. The fine edge is hand-sharpened to 16 degrees per side, and the hammered tsuchime finish acts like a series of small hollows that reduce drag and help food fall away.
Handle: The contoured walnut PakkaWood handle is genuine hardwood impregnated with resin, so it resists moisture and is strong and durable. The embossed end cap with brass trim balances the knife in the hand.
